– 250 g of red fruits (raspberries, strawberries, blueberries or a mixture)
– 30 g of sugar (adjust according to the acidity of the fruit)

Instructions

Step 1: Prepare the panna cotta

1. Hydrate gelatin: In a small bowl, dip the jelly in 3 tablespoons of cold water for about 5 minutes.

2. Heat the cream: In a saucepan, mix the cream, the sugar, the vanilla pod divided in half (or the vanilla extract) and a pinch of salt. Heat over medium heat until the mixture is hot, but without boiling.

3. Incorporate the gelatin: Remove the pan from the heat and add the hydrated gelatin. Mix well until it is completely dissolved.

4. Pour into the molds: Divide the mixture into Verrigni or Ramekins. Leave to cool at room temperature, then place them in the refrigerator for at least 4 hours, ideally all night.

Step 2: Prepare the red fruit coulis

1. Cook the fruit: In a small saucepan, add the red fruit, sugar and lemon juice. Heat over medium heat, stirring gently until the fruits start stewed, about 5-10 minutes.

2. Mix the drawstring: Remove from the heat and let cool lightly. Then mix the mixture to obtain a smooth consistency. If you prefer a coulis with pieces, mix a little less.

3. Go to the sieve: For an even more fluid consistency, you can pass the sieve to remove the seeds.
